Got any good recipes for butternut/buttercup squash?

    Cut into one inch pieces coat with olive oil and Mrs. Dash Garlic and Herb blend. Roast @ 425 until tender.. So sweet no brown sugar needed...

    I really want to try this! I would assume this takes about 30 minutes - does that sound about right?

    I use a whole pepper and sometimes add 2 cups cooked rice to make it a more hearty side dish.

    I love this korean butternut squash porridge recipe, it also has little mochi(sweet rice flour balls) floating around in it.

    Simple ingredients, squash, sugar, salt, water, sweet rice flour. You can probably sub the sugar for splenda or whatever if you want.

    I also suggest trying kabocha squash. I think its a bit creamier than butternut :)

    Check out iowagirleats.com she has awesome recipes on there including a couple of stuffed butternut squashes. There is one with ground turkey and greek yogurt that is to die for! They are also SUPER FILLING!

    Cut it up with some carrots, onions and red potatoes and bake them in the oven on a sheet. Pull them out and mash them together with some garlic, thyme, chicken broth, a little half and half, and chopped turkey bacon (optional). I made this for Thanksgiving and it was AMAZING.

    I've been craving squash for some reason but am sick of the basic boiled pieces or mashed squash.....didn't find much appealing when I googled it so curious if any mfp'ers have any recipes they swear by.

    I love squash! Its flavor and health benefits are tremendous! I like to cut the squash in half, remove seeds, place open sides down in a shallow water bath with foil covering the baking dish. Bake at 350 degrees until tender. Since i also love carrots i add a half bag of mini carrots as well. When cooked drain water and add some (not a pound...lol) unsalted butter, cinnamon, pecans, and salt and pepper to taste. Roast again uncovered until it looks carmelized. Then i use my emulsion blender or regular blender to puree the squash and carrots together, this makes a super creamy delicious soup!

    wow... all these good ideas made me try something with butternut squash today. And it was TASTY!

    Cut up 1 small butternut squash in slices. Removed seeds. Cut up 1/2 of a leek (middle white-ish section)
    Cut up 1/2 of a small potato. Put all items in a 1 quart saucepan with LOTS of water.
    Added a dash of olive oil, a shake of sea salt & a pinch of pepper. Added pinch of freeze-dried garlic.
    Added 3 leftover turkey meatballs. Boiled everything for about 20 minutes.

    AWESOME TASTING clear broth soup, & the squash made it so flavorful!
    Great for chasing away my rainy day blues today.

    The seeds are lovely as well. Bake until crispy and they have a popcornesque flavor!
