Hey everyone- I know of some healthy recipes but could also use more. I am a mom of three and just need some new things to try. So if you have any good recipes, please share. Thanks!!

skinnytaste is a must, honestly. I am a terrible cook, but Gina has really easy instructions with simple ingredients. All of her food is great, but I particularly recommend any of her latin dishes. I could live and die on her fiesta lime rice. I'm actually going to make her shrimp & avocado salad for lunch tomorrow so I don't let the avocado in my fridge go to waste.0

I made this up tonight but it turned out really well; I'm studying for an exam so I needed something that could be made in under 30 minutes. Another MFPer just asked for the recipe so I already have it typed out:
Butternut Squash Tacos
You will need:
-Half a red onion, diced
-1/8th cup pickled jalapenos, chopped
-1.5 cups cubed butternut squash
-Chili powder
-2 ounces shredded pepper jack cheese
-1 cup shredded green cabbage
-1 medium tomato, diced
-1 avocado, diced
-1/4 cup chopped cilantro
-Juice of 1 lime
1. Boil the squash cubes in salted water until soft. Drain.
2. Spray a pan with oil and saute the onion over medium heat for a few minutes. Add the jalapenos and saute another minute.
3. Add the cooked squash, smashing it up with a potato masher or slotted spoon. Add a bit of water (maybe 1/4-1/2 cup) as you go along. Then add chili powder to taste and stir in the cheese. Once the cheese has melted, taste and add salt if necessary.
4. To make the topping, mix together the cabbage, tomato, avocado, cilantro, and lime juice, and add salt to taste.
5. Warm some small corn tortillas (I do this by putting them in a hot pan for 30 seconds). Fill each tortilla with some of the squash mixture and top with the topping.
The calorie count I have in my food diary is for three tortillas and half the mixture/topping. I really stuffed mine though!0 -
Also, the New York Times column Recipes for Health is fantastic. I've never tried a recipe from there that I didn't love.0
