These are from Hungry Girl & are delish! Mine were a little more cals (109) because I used Lite Cool Whip, and a whole, full sized cane. It needed more peppermint flavor for me, but you could add peppermint extract to save cals. Hope you enjoy them, they are really good, and I actually got 17 instead of 16!
Crunchy Candy Cane Snack-wiches
PER SERVING (1/4th of recipe, 4 mini sandwiches): 93 calories, 1g fat, 60mg sodium, 20.5g carbs, 0g fiber, 7g sugars, 1g protein -- PointsPlus® value 3*
Need a sweet snack? Step away from that tin of cookies hanging out on your kitchen counter -- these crisp 'n creamy treats are what you need!
Ingredients:
3 mini candy canes or 1/2 standard-sized candy cane, lightly crushed
1/2 cup Cool Whip Free, thawed
32 chocolate-flavored mini rice cakes (like Quaker Chocolate Quakes Rice Snacks)
Directions:
To make the filling, gently stir crushed candy cane(s) into Cool Whip in a small bowl. Lay 16 mini rice cakes on a plate, and evenly distribute filling among them, about 1/2 tablespoon each.
Lightly place another rice cake over each filling-topped cake to form 16 sandwiches. Freeze until filling is firm, at least 1 hour. Yum!
