Baby Bok Choy Stir Fry

Really easy!! Really Simple!!
2 heads of Baby Bok Choy; Washed and cut off ends, then cut crosswise
2 bunches of Asparagus; woody part removed and cut into thirds
3 cloves of Garlic; peeled and sliced
2-3 cups Medium Shrimp; raw, peeled, and tails removed.
1 TBSP Olive Oil
Sea Salt (adjust to taste)
OPTIONAL:
Red Pepper Flakes (adjust to taste)
Set Wok (or similar shaped pan) to high heat and add the oil.
When Oil is hot, add garlic and stir fry for 30 seconds or until Flagrant.
Add Shrimp, pinch of Sea Salt & Red Pepper Flakes. Cook for 2 minutes. Remove from Wok.
Add asparagus and a pinch Sea Salt & Red Pepper Flakes. Stir Fry for 1-2 minutes.
Add Baby Bok Choy & Shrimp. Stir-fry until Bok choy begins to soften.
Turn off heat and Serve!
I usually serve this with rice. The wonderful thing about this recipe is that you can customize it!! Try it with Tofu, Chicken, or Turkey! Add in your favorite Veggies! Bell Peppers, Onions, you name it! Let me know how you like it!!
