I usually mix up my regular garden salads by adding steamed frozen peas, canned garbanzo beans, crumbled bacon, chopped boiled eggs, crushed saltines, homemade chicken salad made with fat free mayo, canned mandarin oranges, chopped fat free lunchmeat, chopped hard salami, imitation crab meat, canned tiny shrimp, cubed cheese (rather than shredded), craisins, salted peanuts or sunflower seeds, or raw broccoli bits tossed in sweetened fat free mayo & finely diced onion.
Also, wilted lettuce salad is great too...you can use leaf, boston, or any very tender lettuce or spinach. Heat to boiling a little vinegar with added water and sugar, then toss it on the fresh leaves scalding hot. Mix in crumbled bacon, chopped boiled eggs, and very finely diced sweet onion and it is great! A super way to use your fresh picked garden lettuce! Doesn't keep well as it needs to be eaten immediately. Also, spinach salad made with a "dressing" of fat free cottage cheese which has been flavored with a little vinegar and sugar is great too, and a good source of calcium.0 -
i just posted a blog about this....

I spend ridiculous $$ on fancy flavored balsamics for dressing...I like a sort of southwestern spin to my salads with black beans, jicama and avocado.

My favourite salad at the moment is chiffonaded kale, topped with thinly-sliced green apple & toasted cashew crumble. Then you dress it with a homemade honey, EVOO & lemon dressing, sit back and enjoy! Just be sure to massage the dressing into the kale before you top it, to coat it well & to break down the toughness of the raw kale.
That reminds me, I haven't made it in a while, I am definitely planning that for tomorrow.0 -
My favorite salad right now is baby spinach leaves, Skinnytaste blue cheese dressing, broccoli, and slices of beef strips. (I use John Soules fully cooked beef fajitas) Dressing is only 94cals for 1/4 cup. The whole salad is 260 cals !0
