Venison Chili

This is an awesome lowfat food thats high in protein and complex carbs.

2 pounds venison steak (cut into small bite size cubes)
2 pounds venison burger
2 large Red Onions
3 whole Jalapeono peppers
2 large Red Bell Peppers
2 tbs olive oil
2 cans crushed tomatos ( 28 oz cans)
2 cans diced tomatos (28 oz cans)
1 can Dark Red Kidney Beans (15oz)
2 can pinto beans (15oz)
1 can light red kidney beans (15oz)
2 packs Two Alarm Chili Mix

In very large pot brown meat with olive oil, add in diced red onions and red pepprers. Place jalepano peppers in whole (do NOT cut them). Cover and let stew for 30 mins until everything is soft. Add in tomato products and seasoning packs, bring to low boil and then let simmer for 30 mins, add in beans ( drain all fluid from beans first). Let chili simmer for 2 hours. Serves large family, adjust amounts accordinly.

    I've never had Venison, but have heard that it's fabulous... sounds yummy!!

    Of course the trick is getting the venison to begin with. I hunt in New Hampshire and usually I am fortunate enough to harvest at least one deer a year. Last year I got 3 deer so my freezer is pretty full of meat. That enables me to not have to eat any beef all winter. Deer meat is very low fat and has no hormones or steroids injected into them!! If you dont hunt you can probably find a specialty butcher shop around that sells farm raised venison.
