have any good recipes to share0 -
You can pretty much do anything with chicken. De-bone it, chop it, and make a stirfry or quesadilas, or use it ontop of a salad. roast them with a little rosemary and lemon juice and pair them with some roasted potatos and a nice salad, or grill them with a little BBQ sauce, or barbeque them... really, chicken is so versatile!0

cut up chicken and cook
make some rice (brown)
put it in a cassarole dish
cover it with a can of low fat, low sodium cream of mushroom soup mix with a bit of milk
add chicken
spice to your liking cayenne pepper or curry
add a touch of cheese on top
bake 350 30 min0 -
My favorite thing is to cook the chicken with veggies -
spray cookie sheet with pam
put on chicken and all the fresh veggies you like, zucchini, squash, bella mushrooms, etc
spray everything with pam
season it with your favorite seasonings
bake at 350 until chicken is done
VERY low cal and very tasty!0 -
I like to stir fry. Debone, skin and cut up the thighs into about 1 inch chunks. Saute a little onion and bell pepper in olive oil until tender. Add some garlic and the chicken. Add salt and pepper to your liking. When the chicken is brown add about a cup of chicken broth and a tablespoon or more of soysauce and throw in all of your favorite veggies. I like sliced carrots, broccoli and mushrooms. Cook to the desired doneness. I like the veggies a little on the soft side. Serve it with brown rice. :happy:0

Debone and skin, cut into cubes.
Put 1/4 of an onion and 2 or 3 garlic cloves (more if you like garlicy stuff) in a food processor and mix. In a bowl, mix about 1 cup of plain low-fat yogourt, garam masala (Indian spice mix, otherwise use cumin, coriander, paprika, cinnamon, curry) to taste and the now chopped onion and garlic.
Put the mixture over the chicken and let marinate overnight. Cook as you would any chicken in the oven, and serve with naan or pita bread. Tandoori chicken in a pinch!0 -

Here is how I cook chicken thighs:
take the skin off, wash, put in a 9X13 glass oven safe dish, put water in until it meets the chicken but doesn't cover it. I then spray on some fat free o calorie butter, and then sprinkle garlic powder and all purpose seasoning(these don't have sodium in them), then I slice up a medium sized onion and pull the slices apart, and place around the chicken, cover with aluminum foil and bake for a 1 hour and thirty minutes, at 375 degrees.0
