Low Carb Dinner for tonight

Hi everyone!
My wonderful fiance is going to the store to get ANYTHING I want for dinner tonight- and I am doing the low-ish carb thing
What ideas do you have for dinners with under 40 grams of carbs??? (that are still yummy)

OH MAN!

Here's some of what I've made:

Southwest Bunless burger w/ bacon and guacamole
Spinach Souffle
Stuffed red peppers (stuffed with ground beef, taco-ish seasonings, sprinkled with some spicy cheese)
Pot roast
Green beans w/ bacon chunks
Italian sausage w/ peppers and onions
Spinach salad w/ salmon, capers, tomatoes, peppers, and balsamic vinagrette
