I have thawed out some chicken breast but I get home late in the evening so I need a quick, healthy recipe to make but I want more than just grilling it up! Can you all give me some suggestions??! Thank you in advance!

    Not sure of the calories, But. Coat chicken breast with flour (whole wheat works), brown both sides in olive oil, remove from pan. Take whole onion chopped in small pieces, cook in remaining oil ( may need to add more? ), once onions are see through, add 1-2 cups of chicken stock, adds chicken breasts and let cook until chicken falls apart !

    I love smothering my breasts in curry and packing with some light brown sugar.
    Pop in oven until cooked through. So delish.

    A chicken stir fry.

    4 oz chicken
    2 cups frozen stir fry veggies
    garlic to taste
    ginger to taste
    1/2 cup rice noodles

    If you like it a little spicy add a little thai chilli sauce


    My favorite is either a chicken berry almond salad or an Chicken Apple Pecan salad

    Almond Berry

    4 oz sliced chicken
    Romaine Lettuce
    1/2 berries
    1 tbsp shredded asiago cheese
    1 tbsp slivered almonds
    1/8 cup craisins
    1 tbsp reduced fat raspberry vinaigrette

    Apple Pecan

    4 oz sliced chicken
    Romaine lettuce
    1/2 apple
    1 tbsp blue cheese
    1 tbsp chopped pecans
    1/8 cup craisins
    1 tbsp reduced fat raspberry vinaigrette
