is it even possible?

i got diagnosed with insulin resistance today. basically, my body just isn't using insulin as effectively as it should, but it's NOT diabetes. my doctor is sending me to a dietician (meeting with her on 12/30) to try to put me on a high protein, low carb diet. this one, to be exact: http://en.wikipedia.org/wiki/Protein_Sparing_Modified_Fast. i will be under medical care for this.

however, the problem becomes...i don't eat meat, and a majority of protein and low carb comes from animals! i do eat eggs, milk, cheese, etc. but not very often.

my alternative, if the dietician can't find a way to make it work, it's medication until my insulin gets under control - my doctor said maybe 6 months or so.

my question...

do high protein, low carb foods exist for vegetarians/vegans? i am sure they do but i'm completely unaware of them. some information would be great.

A little more difficult, but absolutely possible. You eat eggs, milk, and cheese, so that makes it easier. Add in some tofu, some greek yogurt, legumes, and eat your veggies and you should be okay!

    Good luck!
