This recipe I wanna make calls for 1/2 cup regular sugar and 1/2 cup vanilla sugar.. I don't have any van sugar - but I do have vanilla extract.. can I just use 1 cup or regular sugar and a teaspoon of the extract rather than go out and buy van sugar?

    Vanilla Sugar
Vanilla Sugar is a readily available pantry item in Europe. If you cannot find vanilla sugar at the grocery store, here is a handy substitution that does not use real vanilla beans, which tend to be expensive.

    Ingredients:
    2 cups granulated sugar
    1 teaspoon pure vanilla extract
    Directions:
Blend the sugar and the vanilla extract in a bowl, then spread it on a tray lined with wax paper or plastic wrap and let it dry for 5 hours.
Press out any lumps or sift through a strainer.
Store it in an air tight plastic container.
Thanks to GoodCooking.com for the recipe.

Whenever you use real vanilla beans, instead of throwing the beans away after using the seeds, toss them in the sugar. :) I use it in anything.

In your case, I'd just drop a bit of extract in the dish, along with one cup of sugar. it doesn't have to be an exact science, have fun. If your recipe has wet ingredients, I'd toss the vanilla in with those, I take the time to make ice cream & even creme brûlée often, but no way am I taking 5 hours to prep that ingredient, I doubt that's necessary.

ok thanks for that idea too :) It does have wet ingredients so it makes sense to just use the extract to mix with those.. :)
  • they do make vanilla powder. I wonder if you could cut the calories and just use that.
