Faux Frying with Fiber One

I've seen the Hungry Girl stuff where she faux fries with ground up Fiber One cereal and I finally tried it tonight and it was really good! I seasoned it with some chili powder, garlic powder, salt and onion powder and coated some skinless chicken legs with it and they came out crispy and darned tasty. I'll definately be trying it with other things as I have the time.

    I've tried doing that and seriously to me it tastes like cereal covered chicken.. Maybe if go heavy on the spices I won't notice. but I don't eat fiber one (or any corn cereal like that) so having to buy a box just to try probably won't happen for a while lol

    didn't like it.

    Fiber One is just WAAAAAY too sweet for a savory dish.

    It was basically the Hungry Girl Crispity Crunchity Chicken (or something like that)

    6 chicken legs (skin removed)
    1/2 c fiber one
    chili powder
    garlic powder
    salt
    onion powder
    1 egg
    2 tbsp water

    Preheat the oven to 400.

    Grind the cereal. Mix in spices to taste. The original recipe had specifics listed but I just winged it.

    Beat the egg and water together.

    Dip chicken in egg wash then coat with cereal mixture. I sprayed them lightly with cooking spray so they'd get extra crispy.

    Bake 20 minutes then flip and cook 15 more. I used the roasting tray out of my toaster oven so neither side got soggy since it wasn't just laying on a pan.

    I does have a slightly sweet taste but I like that. I used to make a honey mustard chicken using mayo and honey mustard instead of the egg wash and crushed up corn flakes instead of the Fiber One. It was one of my go to recipes when I used to eat everything in sight lol.

    To each his (or her) own. I like a slightly sweet coating on chicken sometimes. Captain Crunch Chicken from Planet Hollywood is one of my favorite things ever:love:
