I am new to eating healthier and would like some ideas!

    Green pepper chicken

    4 boneless skinless chicken breasts
    2 green peppers, chopped
    1/3 cup low sodium soy sauce
    brown rice, cooked

    Place all ingredients in a pan, cover and bake at 350 for 30 minutes. Serve over brown rice.

    You can add onions and/or pineapple if you like as well. I've tried both and they are tasty.

    Sweet and spicy salmon

    4 oz salmon filet
    1/2 tbsp teriyaki sauce
    1/2 tbsp sweet thai chili sauce
    dash of red pepper
    2 pineapple rings

    Mix the teriyake, chili sauce and red pepper. Place pineapple rings ontop of salmon and pour sauce mixture over top. Bake covered for 20 minutes at 350. If I make this as a single serving meal, I bake it in a foil pouch. If I'm making multiple servings then I bake it in a foil covered pan. Serve over brown rice with steamed broccoli on the side.

    Eggplant meal.

    2 eggplant - peeled/cubed and boiled for 8 minutes
    mix with 2 cups bread crumbs 4 eggs and 1 cup mozzarella cheese.
    make into 1 inch balls.
    Bake at 350 for 30 minutes.

    Trader Joe's baked blue corn chips with 1/2 cup of plain Greek yogurt, salsa, 1/2 cup low sodium black beans, and avocado slices!

    Bowl of steel-cut oats with almond butter!

    Spinach salad with baked salmon, goat cheese, tomatoes, cucumbers, and strawberries!
