Apple Dumplings

2 Tablespoons Packed Brown Sugar
1 1/2 teaspoons Cinnamon
1 teaspoon Cornstarch
1 teaspoon Vanilla Extract
1 Tablespoon Water
3 Medium Apples, peeled and cored
3 Square Egg Roll Wrappers
12 Miniature Marshmallows
Fat Free Cool Whip or Fat Free Vanilla Ice Cream (optional)

Preheat oven to 375 degrees. Spray a six hole muffin tin with butter flavored cooking spray. In a small bowl combine the brown sugar, cinnamon, cornstarch, vanilla extract and water. Add the apples and toss to coat. Place each apple in the center of an egg roll wrapper, then place 4 marshmallows into the center of each apple. Bring the corners up to the top of each apple, pressing firmly to seal the edges. Roll each apple a second time in the cinnamon mixture and press the edges together again. Stand each apple in the muffin tin. Divide any leftover cinnamon mixture and pour it into the center of each apple. Spray each apple lightly with butter flavored cooking spray. Bake 20-25 minutes until golden brown. Let cool 5 minutes before serving. Top each with 2 tablespoons of fat free cool whip or serve with fat free vanilla ice cream for additional points.
