BBQ Chicken and Rice Skillet

8 boneless skinless chicken thighs, cut into chunks (about 1 lb.)
1 tsp. oil
1-1/4 cups water
1/2 cup KRAFT or BULL'S-EYE Original Barbecue Sauce
1-1/2 cups instant white rice, uncooked
1 large red pepper, chopped
1 cup chopped zucchini


BROWN chicken in oil in large nonstick skillet on medium-high heat 3 min.

ADD water, barbecue sauce and rice. Bring to boil.

REDUCE heat to medium-low; sprinkle with pepper and zucchini. Cover. Simmer 10 min.

SERVES: 4 (1 1/2 cup servings)

Calories 350 Total fat 10 g Saturated fat 2.5 g Cholesterol 75 mg Sodium 490 mg Carbohydrate 41 g Dietary fiber 2 g Sugars 10 g Protein 24 g

Substitute
Prepare as directed, using boneless skinless chicken breasts.
