1 13.25 oz. pkg dried whole-grain pasta shells
8 oz. frozen cooked medium shrimp
2 tbsp. olive oil
3 cloves garlic, minced
5 cups (5 oz.) baby spinach
1 tsp. finely shredded lemon peel
3 tbsp. lemon juice
salt and pepper

1) In a large pot, boil pasta according to package directions, adding shrimp during the last minute of cooking. Drain and return to pot. 2) Meanwhile, in a large skillet, warm oil over medium heat. Add garlic, saute for 30 seconds. Mix in spinach, tossing with tongs, for 1-2 minutes or until wilted. remove from heat. Stir in lemon peel and juice. 3) Combine spinach mixture with pasta and shrimp. Season to taste with salt and pepper. Drizzle each serving with a bit of olive oil, if desired. Makes 8 cups.
