    Right there with you. I miss cheese almost as much as chocolate. I have both sometimes but not with the delightful, calories-don't-matter wild abandon that I used to. I get genuinely excited when they have cheese samples at Costco. :ohwell:

    Love the idea, sounds delicious! How about cheese, crushed up taco shells, meat + all the other goodies? Hey, you only get a birthday once a year and you should enjoy it whichever cheesy way you chose :)

    I'm thinking that mozzarella might be better, as it has a less acid flavor to it than the four cheese blend. Also, I'm thinking that a little marinara in there would be tasty.

    If you're going to gorge on cheese, do a really good one. I personally love "Humboldt Fog" goat cheese. YUM!

    Hell, even a really nice sharp cheddar would be lovely.
