Clean Eating Cranberry Pecan Cookies

Hello! Just made these cookies the other night for Christmas and they are so yummy! I got the recipe from clean eating magazine and modified it a bit to bring down the calorie count. 80 calories per cookie if you make 45 cookies.
1/4 cup coconut oil
1/4 cup organic butter
1/3 cup sucanat
1/3 cup stevia in the raw
1 egg
2 egg whites
1 tsp. pure vanilla extract
1/2 can pure pumpkin
Mix all wet ingredients together.
In a bowl, mix together dry ingredients:
2 c. white whole wheat flour
1/2 t. baking soda
2 t. cinnamon
1 t. sea salt
2 1/2 cups old fashioned oats
1/2 c. chopped pecans
1/3 c. dried juice-sweetened cranberries
Mix together wet and dry ingredients, drop by spoonfuls onto cookie sheet and bake at 375 for 8-10 minutes. Enjoy!

Have you tried them yet, using your modified recipe? I saw the original but haven't tried it yet, so I wouldn't know what to compare it to, lol....0

Yep, made them the other night, and have been getting into them way too much. I didn't have apple butter that the original recipe called for, thus the pumpkin. I found they were really really dry (as in wouldn't hold together) unless I added the whole can which is wierd since the original recipe only called for 2 T. Maybe I did something wrong.0
