Healthy, easy crockpot ideas?

My days are pretty full. I work till 3:30 and then have just enough time to run home, walk the dog and change into my yoga gear before heading out to my 90 minute hot yoga class in rush hour traffic. I'm generally not home till at least 8 pm during the week and am fast asleep by 10 pm. The last thing I want to do for these 2 hours is cook. I keep lots of lean cuisine's, light canned soup and hummus on hand, but after 6 weeks of eating the same thing after my workout every day my tastebuds are craving real food!

I'm trying to stay away from fatty red meat. Chicken, turkey, pork tenderloin, or creative vegetarian recipes welcome (I have an ultra carnivore husband for whom protien is a must).

Suggestions?? Thanks!!

    There's a site called skinnycrockpot.com or skinny crock pot on Facebook that has lots of different types of slow cooker recipes. You might want to check it out :smile:

    * 4 boneless skinless chicken breasts
    * 32 ounces salsa (I use 2- 16 oz. jars)
    * 1 (14 1/2 ounce) can corn , drained
    * 1 (14 1/2 ounce) can black beans , drained

    OPTIONAL:
    * flour tortilla
    * sour cream
    * guacamole
    * lettuce
    * tomato
    * cheese
    * salsa

    Directions:

    1. Place first four ingredients in crock pot.
    2. Cook on low 6-8 hours.
    3. 30-60 minutes prior to serving, remove chicken, shred and return to crock pot.
    4.To serve, use chicken mixture as filling inside tortillas.
    5. Add desired condiments.
