Serves 6
1 - 1 1/2 lb london broil
1 tsp finely shredded lemon peel
1/2 cup lemon juice
2 tbsp sugar
2 tbsp soy sauce
2 tsp fresh oregano or 1/2 tsp dried oregano
1/8 tsp black pepper
Trim fat from meat. Score meat on both sides making shallow cuts at 1" intervals in a diamond pattern. Place meat in a plastic bag in a shallow dish. Combine rest of ingredients in small bowl. Pour over steak, seal bag. Marinade (overnight if possible). Drain meat, reserving marinade. Grill, brushing once with marinade halfway through. It'll take about 20 minutes for medium. To serve, thinly slice steak diagonally across the grain.
