Kale Miso Stew

Thought I would share. I just ate the full recipe for about 115 calories. My logs were showing a deficiency of potassium. So between that and wanting to have a filling low-calorie lunch in preparation for a holiday party tonight, I made a pot of stew. I didn't measure the spices so have fun and play with it.
4 cups water
1/4 cup diced onions
1/3 bag of Trader Joe's chopped kale
a couple pinches of dried arame
1 tbsp umeboshi paste
dash of Chinese 5-spice
a couple of dashes of low-sodium soy sauce
dash of kelp flakes
a couple dashes of ume plum vinegar
a couple dashes wasabi powder
2 tbsp eden garden miso paste
Put everything except miso paste into a pot and bring to a bowl. Reduce heat to low and cover. Simmer for 20-30 minutes to develop flavor. In the last couple minutes, add miso paste. Serve.
It is not a low-sodium food but it's super filling and delicious!
