So I was watching Hungry Girl on Food Network. She was advising that you could add volume to a frozen lean meal with some additions that are low cal so I tried it. I added steamed broccoli, cauliflower, and carrots to lean gourmet. The sauce was not quite enough so I also added a bit of rice vinegar because it was a tad sweet for me. It was great and I am stuffed! The extra veg only added 25 calories but I was able to get in more fiber and a full serving of veg!

Any one have any ideas of a similar nature? Lunch is a struggle and I need it quick, easy, affordable, and healthy!

    You can add vegetables to rice to make a giant stir- fry for lunch. It makes the rice more filling for less calories.

    last week i went to the market soooo hungry and i was starving when i got home. I steamed a whole zuchinni and a whole squash and put some kosher salt on them and then dumped a sauce and chicken lean cusine on it, i don't even know what one, and it was to freaking die for. Maybe coz i was so hungry. But it didn't add many calories but, it sure was tasty and filling!

    Oh, great idea!!! I usually have a salad a long with one of those but that sounds tasty, too. Thanks for sharing.

    I find that I try to eat heavier midday rather than dinner, I usually cook and have left overs for a day or so. I like to take chicken or lean ground beef, add onions garlic, can of diced tomatos, and what ever veggies I have handy and simmer together for about 1 hr. You can then add one serving of carbs like rice potato or noodles individually so that they dont get soggy. Take snacks to eat every couple of hours like tangerines at 34 cals, veggie sticks with hummus, what ever you want as long as they are around 70 cals or less. My hardest time to stay on track is when Im working.

    Sounds like a good idea. Incorporates lots of vegetables and is lower in calories, too.

    I like to cook about half a bag of frozen chopped broccoli and mix it with the Lean Cuisine mac & cheese.

    I never thought of doing that to my Lean Cuisine! Excellent idea! Especially when the Lean Cuisines can run around 300 calories and sometimes aren't very filling. Thanks for sharing!
