I got creative in the kitchen tonight and it turned out really well!!
Brussels Sprouts and Ham
Chop up your sprouts (cut off the ends, cut the sprout in half and then just sort of chop it from there).
Dice up 1/2 of a small onion.
Chop up left over ham (about 2 cups worth)
Heat olive or canola oil in a pan w/ just a pat of butter (or leave out the butter...but it really tastes yummy if you can sacrifice a few cals!!), toss in all the above items. Season w/ a bit of salt, pepper and garlic powder. Add about 1/4 cup of water, cover w/ lid and cook for about 7 mins. I then removed the lid and let the water cook out of it.
Served this with oven roasted potatoes (I used Ore Ida tonight as I didn't want to peel my own).
It was a huge hit with my hubby and three kids
Will definitely be making this again!!

Ok, here is the info. I added it to recipes and made it public!
Ham and Brussels Sprouts Medley - makes 5 servings as I have typed it. I didn't measure it...but about 3/4-1 cup serving sizes.
180 (cals)
10 (carbs)
9 (fat)
13 (protein)
42 (cholesterol)
479 (sodium) I am assuming the cholesterol comes mainly from the ham?? I wouldn't know how to cut back on that!!0 -
Brussel sprouts with fresh lemon, fresh chicken stock, little pepper and red pepper flakes.. OHHHHHHHHHHHHHHHHHHH BABY!0
