Just discovered Lefse. Made breakfast this morning: Egg and bacon folded up in a piece of Lefsel...so good!
1 Egg: 70 calories
2 slices bacon: 90 calories
1 sheet of Lefse: 30 calories
Not a breakfast I would have every day but it felt so naughty to eat it!
(I would post a pic but I'm still trying to figure out how to do that!) :blushing:

    Wow!!
    I was just talking about how I had wished my mother-in-law would send lefse!!! Now I really want her to send it!! It is only 30 calories a piece!! Yay! They make homemade, but I am sure it can't be that much more...can it?!?!?
    I think I will web search lefse and see if I can find it anywhere around here...I am surprised the commisary doesn't have it, because they do have a lot of ethnic food merchandise (maybe I can ask them to order some)!! Oh look what you did!!!! LOL!
    I will not be asking for ludefisk (sp?) though.....
  • I married a Norwegian 25 years ago. She makes lefsel every Christmas. I love it, but I can't do lutefisk.

    How could anything that large, and made out of potato, be only 30 calories?

    Is it crazy-thin, like a crepe or something?

    yeah it's really thin. I found a different brand that is higher in calories but is thicker. I prefer the thinner one. Right now I'm snacking on Lefse "chips" that I made:
    Spray the lefse sheet with I Can't Believe It's Not Butter spray, then sprinkle on a little salt and garlic powder. Cut with pizza cutter into pieces and bake at 350 F for 5 minutes, then flip them, bake another few minutes.

    On a different note, something that's awesomely tasty on lefse (we make it every may 17th) is lefse with smoked salmon, cream cheese, caviar (faux works well, it's the taste you want) and chopped red onions (optional, I leave these out)

    And it's fairly simple. Smear some cream cheese, add sliced smoked salmon and dobs of caviar, and drizzle onions - all down the middle, then roll it up and cut into bits. Great for picnics or snacks. Mm..
