I'm going in a few hours on a road trip from Montana to Washington and its going to be a 10hour+ car ride, and refrigeration is somewhat of an issue... Can't pack anything that needs to be kept cold for a long time.
Any ideas what you would bring or get along the way?

My Goals are a High protein, low carb diet, but at this point i'll just go for anything HEALTHY

Hummus and raw vegetables. I've kept hummus out for that length of time and it was fine.
Cheese.
Fresh fruit.
Water.

PB on flatbread, I don't think that needs to be refrigerated! And there are plenty of fruits that don't need to be in the fridge, either. Healthy trail mix (or a nice mix of nuts) is always good to munch on while driving so that you're not starving when you do stop to eat.
Another thing you can do is freeze some bottles of water ahead of time and stick 'em in a bag - then they can act as a mini-fridge for a few items, and they'll be nice and thawed by the time you want to drink them! (assuming you bring some thawed ones with you as well!)0 -
Safe travels! Here are some simple healthy snacks you can carry in a lunch pack...
Almonds
Hard boiled eggs
Apple
Banana
Protein bars
Tuna packs
Turkey jerky

The organic/health food section of your grocery store will likely have some decent healthy-enough snack food options for a low-carb dieter on a road trip. I just took a road trip with some black bean chips and coy crisps as my go-to snack food. Raw almonds are another good choice.
If you can bring a cooler, some cottage cheese or similar food is another solid option. In the future, when you have time, try making some home made beef jerky before long car trips.
To keep from going crazy on the snack food, pre-portion it out into zipper bags before you leave. That makes it easier to control your quantity as well as entering it into your food diary after the fact.
