Vegetarian Taco Salad

My version of vegetarian taco salad.


Makes 2 large salads

Ingredients:
4 cups lettuce, chopped or shredded (romaine or iceberg)
2 c. Morningstar Burger Crumbles
1 Roma tomato, chopped
¾ c. fresh salsa
½ c. cheddar cheese, shredded
2 tbsp Daisy Light Sour Cream
1 green onion, finely chopped
½ tsp chili powder
Pinch cayenne pepper
1 tsp cumin
8 tortilla chips

Cook:
- Heat the burger crumbles over medium heat in a medium-sized skillet until they are no longer frozen.
- Add the tomato, cumin, chili powder, cayenne pepper, and 1 tbsp of the salsa. Mix with the burger crumbles and cook until the mixture is thoroughly warm.
- In a separate bowl, mix together the lettuce, green onion, two tortilla chips crushed, and 4 tbsp of the salsa.
Divide the lettuce mixture into two bowls.

Assemble:
1. Lettuce mixture
2. Mock-Taco Meat
3. Cheese
4. Remaining salsa
5. Sour cream
6. Remaining tortilla chips
7. Eat and enjoy

Calories: 501 (subtract 115 calories if you omitted the cheese)
Carbs: 29
