Vegetarian Spinach Garlic Pasta

A very simple recipe that tastes great.

Spinach Garlic Pasta
Vegetarian
Serves 4

Ingredients:
½ lb any pasta, cooked (I like penne)
1 bunch of fresh spinach
2 diced tomatoes
1 cup sliced button mushrooms
4 cloves of garlic roughly chopped.
2 tbsp olive oil
2 tbsp Daisy Light Sour Cream
Pinch of oregano
Salt & pepper to taste

Cook:
-Heat oil in a medium-sized skillet over medium-high heat. Add garlic and mushrooms. Cook for 2 min, don’t allow garlic to brown.
-Add spinach and tomatoes. Cook until spinach is wilted and reduced in sized.
-Add sour cream, oregano, salt, and pepper.
- Mix thoroughly and add to pasta.

Nutritional Information:
1 serving (¼ of prepared recipe)
Calories: 323
Total Fat: 10g
Total Carbs: 48
Protein: 11g

    me too, although I took out the tomatoes and mushrooms (my husband doesnt like them) and added asparagus and zucchini

    it was fabulous! :love:
