Ideas to up fats and oils in diet

I have really dry skin that tends to itch and crack. I use lotions and oils externally and work on eating a balanced diet with specific things like carrots, green tea, and flaxseed/fish oil supplements to help keep it hydrated better. Plus I drink tons of water throughout the day. I'm looking into a new humidifier, but it hasn't helped much in the past. I'm still itchy.
I did notice that I'm typically low on fats in my diet. I always come in way below the recommended amount. When I bump them up for a few days, my skin starts to feel better. However, I'm having a hard time finding ways to increase the fat without making my calories exceeding my daily limit. Anyone have ideas to add some lower calorie, fat friendly healthier foods to my diet?
