I usually just do eggs in various forms (scrambled, omelet w/ veggies, fried). I just made the best breakfast (for dinner), though, and I'm now going to share it. It's just eggs benedict without the bread/english muffin:

I also only used egg yolk and butter for the hollandaise sauce instead of adding the ancillary ingredients.0 -
Overnight oats! You can prepare them the night before once the kiddos are in bed, toss them in the fridge overnight, and then either have them cold or heat them up in the microwave in the morning... Super easy and LOADS of variety! You can basically make them however you like, depending on what kind of macros you're looking for.
The basic recipe would be:
Oats - old fashioned - 1/4-1/2 cup
Liquid - either almond milk, reg milk, or a combination of milk and yogurt or cottage cheese for the oats to soak up
Flavourings - extracts, spices, pumpkin puree, whatever you dig!
Seeds/nuts - Toss in some extra fats and nutrients if you like - they're good for ya! I like chia seeds in my oats, but hey that's just me
FRUIT - mashed banana, sliced strawberries, frozen mixed fruit, whatever you have on hand and like to have in your oats - totally flexible
In the AM you can top with all sorts of goodies too - Natural PB is my personal fave. Just do whatever fits into your macros and keeps you satisfied.
There are TONS of suggestions online. Just google "overnight oats" or "vegan overnight oats" and let your imagination and curiosity guide you! :bigsmile:0 -
Make some things like healthy muffins, so you can grab it on your way out.0

Greek yogurt and instant or microwaved whole oats make a quick breakfast for me (I eat this most days). You can toss a few berries into your oats too. I've also boiled eggs the night before and had them cold the next morning with some skim milk and a piece of fruit on the go. Peanutbutter on toast or on a slice of wheat bread is an occasional for me.0

Thanks for the "overnight oats" suggestion-sounds wonderful! I'm trying this tonight.0

I make a huge batch of scrambled eggs and add veggies/meats/cheese. I then pour them into muffin pans and bake them. When they are done I freeze them, they take a minute to reheat in the microwave and are SUPER yummy!0

fruit and nut butter
I boil a bunch of eggs when I buy them, then they are ready/easy to grab and eat.
For bars, which will do in a pinch-not every day I like Lara, Clif and Kind.
Cheese sticks/wedges/slices0 -
I toast 1 slice Whole grain bread and put peanut butter on then scrape off as much as possible to cut down on fat but have some protein. Quick easy and an excellent way to start morning0

When i don't want to cook anything I use my protien shake and a carbmaster yogurt with some kellogs Bran buds in it. When i cook i usually do eggs. You can make scrambled eggs in the microwave in 1 minute and they are super fluffy!! Yummmm0

My favs:
Thomas' Triple Health English Muffins (toasted) and Peanut Butter ( 1 T. split between the 2 muffins- it spreads easily cuz it's warm)
or a Smoothie- mix in blender or drink mixer
1/4 c. Plain NonFat Yogurt, 1 c. milk ( I use unsweetened almond milk), 1-2 pkg Truvia, 1 tsp imitation vanilla
you can add fruit to it as well0
