I would love for people to share some soup recipes with me! I LOVE soup so much. The mother I babysit for is moroccan, and always makes delicious soups with lentils in them, so if anyone has any lentil soup recipes, or ANY they would like to share, post away! Preferably soups with few ingredients though (in college, not ton of $ to spend on groceries ) Thanks everyone!

This one is easy and delicious.
Spicy Black Bean Soup

4 cloves chopped garlic
3 (15 oz). cans black beans
1/2 tsp. red pepper flakes, or to taste
1 tsp. ground cumin
1 can (14 1/2 oz.) fat-free chicken or vegetable broth
1 can (10 oz.) Rotel tomatoes
1 cup frozen corn
Coat the bottom of a large stockpot with cooking spray. Add onion and garlic and cook, stirring frequently, until onions are soft but not brown, about 5 minutes.
Place one can of beans in a blender. Add sauteed onion mixture, pepper flakes and cumin. Blend on high until smooth. Pour mixture back into stockpot.
Place second can of beans and broth in blender and puree until smooth, then add to stockpot.
Stir the third can of beans, tomatoes, green chilies and corn into stockpot. Bring to a boil, then lower heat to medium and simmer for 20 minutes.

I will cut up 2 - 3 potatoes into small cubes, cook them in water until tender and then add some "cream of " condensed soup. I like cream of celery or potato, but mushroom or chicken would probably work well. Then add whatever vegetable you have on hand. I generally use frozen. I have used broccoli and mixed vegetables, corn would be good. Then if you want add a handful of shredded cheese. If you don't like "cream of " soups, use stock or bullion instead. For a little spice, add some salsa to the soup.0
