Roasting Potatoes??

What is the healthiest way to roast potatoes??
(OH and they're russet potatoes)

    I use red potatos but the same can be done with russet or any type of potato:

    I have an oil mister so it turns it into a spray (really limits the amount of oil used) and spray for about 1 second to cover tinfoil.

    I wash and then cut the potato into cubes. sprinkle with garlic salt, black pepper, dried parsley, and minced onion (can use fresh I use dryed).

    Make a foil packet/pocket. and place on grill or oven at 350F for about 30 minutes, turning after 15 min.

    I like to roast mine with a drizzle of olive oil and some rosemary (fresh if I have it), coarse salt and freshly ground pepper. I put mine in a big stoneware baking dish with the oven at 400, stirring every 10 minutes until the potatoes are tender, usually 30-40 minutes depending on how large I cut the chunks. Many times I'll do carrots in with this, too, but I start the carrots 10 minutes before I throw in the potatoes, as they take slightly longer to cook.

    My favourite potatoes are smashed potatoes. Boil the potatoes whole with skin on until they are just tender. Place them on a baking tray and apply pressure with the heel of your hand until the potato squishes a little. Sprinkle with a little salt and spray with olive oil. Bake for about 20 minutes and I guarantee you will have the fluffiest baked potatoes ever.
