Creamy Cheesy Deliciousness!
So I was trying to think of different ways to use up the leftover turkey from Christmas. Using some recipes I found, and my own additions, I came up with this:
In a pan combine cubed cooked turkey (or chicken), broccoli (I used 1 cup-ish), cauliflower (1 cup) and crumbled cooked bacon (I used 5 strips, 30 grams cooked). Pour in a little chicken broth, season with some garlic salt and pepper and simmer covered until cooked.
In a sauce pan saute a clove of garlic and a small onion. Add 1 can of cream of mushroom soup, 1/8th cup of heavy cream, 1/4 cup of white wine. Let boil a few minutes, then add 1/2 cup shredded cheddar and 3 table spoons parmesean cheese.
Pour the sauce over the turkey mixture, mix and serve!
I used 150 grams of turkey for 2 servings. Each serving was 439 calories for a large cheesy, saucy portion! It was a little high in sodium, but I didn't use reduced sodium cream of mushroom soup, so making that change would help.
If you have lots of calories to spare you could serve it over pasta, but I'm trying to limit carbs, which is why I went with full fat cheeses and soup. You could EASILY lighten this recipe up by using reduced fat soup and light cheese.
