    Mine is hummus. Never cared for it much, then tried Sabra Roasted Red Pepper Hummus... reallly love it!!

    That's my favorite one too so good I get tabouli too to add with it yum

    Laughing Cow cheese and steamed veggies with balsamic vinegar. Not together, though!

    Grilled zucchini and yellow squash with a bit of olive oil and sea salt

  • Baby spinach!! wrap it up with a whole wheat tortilla, package of budding chicken lunch meat, a tomato, pickles and a touch of bbq sauce and you've got a wrap to kill for!

    Sweet potatoes tossed with a bit of olive oil and thyme, and roasted to perfection! Have also come to love cilantro and make homemade pico de gallo whenever I have a chance. And my new favorite dish is some brown rice with a bit of peanut sauce, topped with shredded cabbage, grated carrots, grated beet, and some finely sliced cilantro and basil. Yum! And I will do almost anything for a veggie sandwich filled with avocado, tomato, cucumber, sprouts, salad mix, and a bit of vegan mayo and dijon mustard. Nom nom.

    It's worth noting that I wouldn't have touched ANY of this before a couple of years ago. Yay progress!

    Butternut squash, I could bake it with a dab of oil, add a touch of seasoning and eat the whole damn thing to myself!!

    I used to despise the taste of both sweet potato and avocados. Now I could practically live off of them (and I did when I had my wisdom teeth out!).

    Love making a simple guacamole to eat with carrots, or baking a sweet potato and just eating it mashed with a bit of cinnamon (or a dab of butter if I have the calories to spare).

    I love eating a whole wheat tortilla with laughing cow cheese, spinach and tomatoes with egg whites. YUM!!

    dates. I'd forgotten how much I love dates. As a snack, and handful of them ... yummy and a good late afternoon boost.
  • Spinach. Was getting tired of boring lettuce for salads so decided to switch my iceberg to spinach. Yumm!
