Fat and Carbs

I have been carefully detailing my food consumption and I have come upon a curious thing, I don't use all of my calories but I almost always use up my fat and carbs for the day. What can I do to balance this out?

Some extra info:
I am a vegan.
I am switching from Weight Watchers Points Plus to MFP (where all fruits and most veggies were 0 points)
My diary says that I am starving myself because I don't use all my calories.

Any advice or help would be much appreciated!
