Pork Loin with Black Raspberry Sauce
Preheat oven to 350.
Tyson Fresh Meats - Supreme Tender Boneless Pork Loin, 205.04 oz (112g) (this is a little of 12 lbs)
Smucker's - Simply 100% Fruit Black Raspberry Spreadable Fruit, 14.95 Tablespoon (whole jar)
Ten Peaks - Minced Garlic, 12 teaspoon
Adams - Onion Powder, 9 tsp
Mccormick - Celery Salt, 3 tsp (0.9 g)
Generic - Parsley (Dried), 6 Tbsp
Generic - Dried Basil Leaves, Ground, 12 tsp
Generic - Oregano, Dried, 4 tsp
Bertoli - Extra Virgin Olive Oil, 3 Tbsp (15ml)
Remove Smucker's Simply Fruit Black Raspberry from jar and put in a bowl. Heat for about 90 seconds in the microwave. Add all the other ingredients in the Simply Fruit and mix well.
The pork loin that I bought was folded in half. I unfolded it and then with a very sharp knife cut a pocket in the loin. I added half of the mixture into that pocket and folded it closed were I had cut it. Then i put the other half of the mixture on the inside of the fold that i started with. Folded the loin back to it's orginal form and tied it all together with roasting string. Before placing loin in pan, rub the outside of the loin with the olive oil.
Place the tied loin in a roasting pan with the fat side up. Place a thermoitor in the center of the loin and cover. Place in oven. After about 30 minutes you will begin to get juice on the bottom of the pan which you will need to bast the loin with using a baster. You will bast the loin every 30 minutes until the internal temp reaches 140. Remove from oven.
Remove all of the juices from the pan. Strain the juices to remove excess fat and anything else. Place the juice in a sauce pan and add Corn Starch (2 tbsps) to thinnen the sauce up.
Remove the string from the pork loin and slice into 1/2" slices. Pour sauce on meat at time of serving.
