Hummus Pizza
Servings: 2
Serving Size: One 6-inch tortilla with toppings

Ingredients:
Two 6-inch flour tortillas
Vegetable oil cooking spray
1/4 cup crumbled low-fat feta cheese, or 1/4 cup shredded Asiago cheese
Freshly ground black pepper, seasoned to taste
1 cup trimmed arugula leaves
1 tablespoon Champagne or balsamic vinegar
2 teaspoons extra virgin olive oil
1/3 cup prepared hummus, divided
3 ounces (1/2 cup packed) cooked and shredded boneless breast of chicken, divided
1 tablespoon pine nuts

Directions:
Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil. Place tortillas on the prepared pan. Generously mist the surface of each tortilla with vegetable oil cooking spray. Divide the cheese and sprinkle over the tortilla, seasoning with pepper. Bake tortillas for 7 to 8 minutes on the middle rack of the oven. While toasting the tortilla, toss arugula, vinegar and oil together in a bowl. Divide and spread the hummus over tortillas. Add chicken and arugula and sprinkle with pine nuts.
