The title may be misleading, but what I want to know is, is it better to log steps taken during a walk or putting in the time and speed? The last website I used said steps over the day rather than a set time/speed of the walk...but the steps were much higher burn overall than the set exercise/walk.

Steps during the day should be accounted for in your MFP activity setting.

As for your walk, just log in your time during the walk - not steps. The calorie burn is a function of intensity anyway, and the easiest most accurate way to track this is through distance and duration. But, if you really want to know exactly, get a HRM.

    Good luck!

For exercise I log time and speed.

However I also track steps throughout the day. I do not record them as exercise. I track them to help keep my overall activity level up.
