Leftover roast beef idea

Thought I would share this as it's been a total success the last few times we've done it. We buy a huge roast beef and cook it as you would normally (on low and slow as they say). There is only 3 of us so with the rest of the beef we slice some up for sandwiches but then I discovered another use.
The last time we did it the beef had been in the fridge for a few days so it dried out a bit. We grated the rest of the leftover beef (about 400g) and made a delicious and very filling beef stew/soup!! We just used a regular grater (although it helps if it's relatively new so that it's still quite sharp).
The stew is made with whatever veg you like, the beef, a can of chopped tomatoes, a bay leaf, 3 tablespoons of paprika and 1 tablespoon of pepper, 1-2 OXO cubes based on your preference (we've used veggie, chicken or beef). We also added some spelt but you could also add any other beans or other stew-y type ingredients. I also added a dash of wocestershire sauce but again - depends on your preference. Add as much water as you think necessary depending on how thick you want the stew.
