Caldo de Pollo/Camaron

Caldo De Pollo / Camaron
3 cans Rotel (one original, one hot, one mild)
8-10 cups of chicken broth (depending on how soupy you want it)
fresh cilantro
fresh onion
about 1/2 bottle of Taco Bell Rachero sauce (do this until you have your preferred taste
1.5-2 cups of cooked brown rice
cooked chicken breast, shredded (I normally use about 2 breasts, but you can use what you want depending on how much & what kind of chicken you like)
** OR you can add a bag of shrimp (camaron) instead of the chicken
Throw it all together in a pot and let it simmer for about 30-45 min, or just put it in a crockpot and let it cook all day, which is what I prefer. The flavors blend together much better that way. Enjoy!
