Beef Jerky

1 1/2 to 2 pounds meat of your choice cut into strips and trimmed of fat
2/3 cup Worcestershire sauce
2/3 cup soy sauce
1 tablespoon honey
2 teaspoons freshly ground black pepper
2 teaspoons onion powder
1 teaspoon liquid smoke
1 teaspoon red pepper flakes

Put all ingredients in a ziplock bag and marinate 6-24 hours. Pat dry and dehydrate. I use a Nesco dehydrator but you can use your oven set at 200 with the door cracked open (put the meat on one rack and line another below it w/foil!!). Remember that when finished they should bend w/o breaking.

I tend to double the honey and triple the red pepper because I like it spicy.

I do not know the nutritional values but I use bottom round which is typically lean.

    No salt. Great Thanks! The biggest problem with jerkey for me is the sodium. I will be trying this very soon.
