Baking without soy-based oils/fats

I just found out my son is allergic to soy. Pretty much all processed cakes, muffins, tortillas, have soy-based oils and fats. So how do you bake without crisco and vegetable oil? And also looking for a new non-dairy, soy-free creamer for him as well (I use it in mac & cheese recipes, fudge...). He also can't have eggs or applesauce, among several other things, but I think that covers it for the purpose of this post... ANy help here would be HUGELY appreciated. Thanks!

Are canola or corn oil acceptable? Would almond or rice milk work in mac and cheese? Pumpkin puree can work instead of applesauce as a replacement for oil, but will have a greater impact upon taste.0

Thanks for the link on the Spectrum shortening, I even found a local Fry's that carries it! I think I'm gonna try Rice Dream for creamer.0
