What do you think my goals should be?

Setting goals. Not my best work. I'm either WAY over enthusiastic (you know i'll lost 20 lbs by the end of the month) or too easy on myself (20 lbs in five months) allowing bad habits to set in. Unfortunately this is a slow and steady pace wins the race type a deal but i NEED instant gratification or I can get discouraged. So I could use some input on setting my mini goals on my way to the Grand Finale! By setting mini goals I feel accomplished before I ever hit my goal weight. But if i DON'T hit a mini goal, its cheat time and that gets me nowhere.
Anyhooooo, here's my scoop:
I am currently 5'5" (and shrinking?), 163.4 lbs and would like to get to 125 to 130
I work full time and spend another half hour or so in another office in the building every day after 5 as a second income so i get to the gym at approximately 6 pm. I can get a solid 45 mins or so in (after changing) but need to get home to my three kids to feed them and love them and direct them because they are seemingly helpless without me and for some reason dad, as cute as he is, is sometimes just as helpless!
So if anyone out there has any ideas on an attainable set of mini-goals I'd love it. Thanks!
