Losing weight AND pinching your pennies

Is it possible to maintain a healthy diet WITHOUT breaking the bank?
My new year's resolutions this year were to be healthy and be frugal. I've given myself a spending limit on groceries for each month for myself and my husband. We're thinking that mexican foods are a good way to go to eat healthy without breaking the bank.
We want to spend no more than $150 a month on groceries for the 2 of us.
One of the way we are doing it is by preparing frozen breakfast burritos that are cheap to make, convenient, fast and healthy. We spent Sunday morning making a big batch of egg white scramble with veggies, wrapping them up with whole wheat tortillas, low fat cheese black beans and salsa. They are quite tasty.

Breakfast seems set, but now we need ideas for cheap, healthy lunches and snacks for during the day. Does anyone have any suggestions?

  • Stove popped popcorn (kernels & vegetable oil), granola bars
    Maybe toasted whole wheat bread with a healthy topping and a piece of string cheese.
