Any high protein Vegetarian dinner recipes??

I'm trying to eat more vegetarian meals. Maybe meat once a week. Every time I google bean recipes, I get chili or mexican types of meals. Which are ok, but not for every night!

I also find that vegetarian recipes are lower in protein, which I'm trying to eat more of.

Any ideas? Cheese and eggs are ok!

    Quinoa is very high in protein and is very versatile. I love it as a pilaf type dish with veggies and all sorts of other yumminess added. Beans don't necessarily mean Mexican food. Some good ol' Cajun beans and rice is yummy. Middle Eastern food utilizes lentils and garbanzo beans. I love mujaddara, a Lebanese lentil and rice dish with caramelized onions. I use brown rice. Minestrone is an Italian vegetable soup with cannellini beans and doesn't always include pasta (I leave it out many times). Learning to cook tofu is a skill. I disliked tofu until becoming vegan and having to ask my dad (10 year vegan) how to actually cook the stuff. Now I love it and so does my teenage daughter. I choose sprouted tofu because it's higher in protein.

    Try googling vegetarian or vegan recipes rather than bean recipes. I think you'll have better success. One blog I love is The Fat Free Vegan Kitchen. Everything I've made from her website is yummy.

  • Pretty much all my dinners are vegetarian and high protein! I just started a new account here so it only has one recipe but if you go to my other website and check the "Pasta Possibilities" or "Rich Risottos" page there's a whole bunch more high protein vegetarian friendly meals generally between 270-330 calories and low in fat! :)
