Hello!
Does anyone have any low calorie moussaka recipes they can share? Instead of the creamy bechamel sauce, do you think greek yoghurt would work instead?
Got some reduced aubergines today and want to use them for dinner tomorrow night!

Greek moussaka is eggplant and meat casserole. To make it lean you can use ground turkey meat and slice eggplant roast it in the oven with a drop of olive oil. I think the meat mixture has tomatoe paste, parsley, salt and pepper. You layer the meat mixture with the very thin sliced roasted eggplant. In a separate pan you can mix 113 grams of butter and 113 grams of flour and add 474 ml of low fat milk until it starts to bubble and pour onto moussaka. Top with bread crumbs and some grated cheese. I would try a butter substitute to get the fat count down. I tried to do the metric conversion for you. Hope that helps. I'm hungry now!0

I have a great one, that is so yummy and real easy too.
500g Lean Lamb Mince ( drain out fat when cooked)
Canned tomotoes
Herbs, salt and pepper
1 Tablespoon of beef or chicken stock
2 tablespoons of tomatoe paste
Diced Eggplants (aubugines)
Low Fat ricotta Cheese
3 eggs
Dice the eggplant and cook in fry pan with small amount of olive oil. Once cook, put to one side.
Cook Lamb mince, once cooked drain fat.
Add herbs, sal and pepper, stock, tomatoes and paste and egg plant and simmer for about 15 mins.
in separate bowl mix the eggs and ricotta cheese
Put mince mixture in a recatanglar dish and cover with the egg and ricotta cheese mixutre. Add a small amount of low fat grated cheese and bake for 20-25 mins on about 180.
