Needing healthy ideas that my skinny husband will eat!

I am wanting to get some healthy dinner recipe ideas for my husband and myself. He is as thin as a rail and likes to eat stuff that doesn't taste like "diet food"! He likes "hearty, country" meals. Hoping to get some ideas that will satisfy him yet are lower in calories... I like pretty simple stuff to make. I'll be honest- if it has a ton of ingredients, I'm probably not going to make it. And like I said, I like it to be fairly simple because I'm no chef!
We like soups, pastas, chicken, beef, casseroles, chilis, breakfast items, and much more. Any ideas?! Thanks!!

I make lots of stirfry's - I have just the meat and vege, and my partner has them with noodles or rice.
I usually cook meat, potatoes and three vege, and i just subsitute the potatoes for more vege or salad. It keeps the man happy, and is satisfying for me0 -
I made porcupines tonight, the calorie content will very depending on what you put in it.
I use lean beef mince, add some vegies, salt-reduced tomato soup and I guess you can use brown rice but I always use white..
You basically add mince with an egg, grated vegies and half a cup of rice in a bowl, mix it all together and make it into meatballs, pop them a baking dish.
In a bowl combine 1 tin of tomato soup and 1 tin of water, once mixed pour that over the meatballs
Cook that in a moderate oven for an hour.
Serve!I put it on mash of some kind - my husband and son have mashed potato, my daughter has mashed potato and pumpkin and I have just pumpkin

I have found that you can make anything taste good with the right spices! I've made eggs more exciting by adding crushed red pepper, fresh scallions, black pepper, chopped onion, and a small teaspoon of cheese in the middle; makes an amazing and filling omelet!0

I used to subscribe to Healthy Cooking Magazine, which is published by the same company as Taste of Home. It had a lot of slimmed down meat-and-potatoes type dishes, comfort foods, casseroles, etc. I definitely found a lot of winners in that magazine! There are also some recipes posted on their website. I did try something tonight that he liked pretty good.. I got the idea off of another post. I took skinless boneless chicken breasts and rolled them in a packet of Ranch dip (powder) and topped them with pieces the fully-cooked bacon you can buy. Baked on 375 for 30 mins (the meat was thick- it would be less time I guess for thinner cuts). Served with corn and brocolli. He said he would eat it again. I guess I'm just used to him saying "That was good!!" when I used to make more fattening things lol. Oh well it takes sacrifices to better yourself in the long run! And just because he's skinny doesn't mean it's okay for him to eat all that fat and grease either.
