Does anyone have any delicious, healthy rice dishes?

Yeah! I have a recipe for Baked Mexican Casserole from an Everything Vegan cookbook that I think is pretty good:
1 15-ounce can black beans
3/4 cup salsa
2 teaspoons chili powder
1 teaspoon cumin
1/2 cup corn kernels
2 cups rice, cooked
1/2 cup grated vegan cheese (optional - I just use regular cheese)
1/3 cup sliced black olives (optional)
1. Preheat oven to 350°F.
2. Combine the beans, salsa, chili powder, and cumin in a large pot over low heat, and partially mash beans with a large fork.
3. Remove from heat and stir in corn and rice. Transfer to a casserole dish.
4. Top with cheese and sliced olives and bake for 20 minutes.
Calories: 289 | Fat: 2g | Sodium: 539mg | Fiber: 11g | Protein: 13g
...It's really filling, the only downside is that it has a lot of sodium. It lasts a few days so I can pre-pack it for lunch a few days ahead of time.0
