27, first time user of MFP, fit but still need to lose weigh

I'm really looking for some support in the community from similar/likeminded people who can just give me a bit of a kick up the backside from time to time.
I lost about 3.5 stone 2 years ago and have gained back nearly 2 stone of it (at least one of those being in the 3 months since I completed the Chicago Marathon - i'm just overeating!)
I'm just about to start training to become a body pump and RPM instructor (in 2 weeks!) and i'm trying to lose weight and get back to my peak fitness (i'm not that far off of that - just the weight making me slower) because I don't want to be an obese fitness instructor.
I weigh 14st now and I would like to get down to 11st (i'm 5'5" but have a curvy shape anyway and have been weight training for about 3 years so I'm not fussed with being any less than that) but as a first target i've set myself 12st7lbs which i'd like to hit for my birthday at the start of April. 7lbs per week should be do-able right?
My current exercise regieme looks something like this:
5km run x 5 per week
Spinning/RPM x 2 per week
Body pump x 3 per week
Boxing x 1 per week
Challenges i've found in the past with weightwatchers have included just not having enough fuel to get me through a normal day with the exercise that I do and getting annoyed with not having enough points for salmon, avocados and other things with healthy oils in.
I don't know if anyone else on here has been through anything similar or just wants to give me a kick up the *kitten* but i'd appreciate any buddies.
