Cinna-coconut pancakes

This recipe is high in protein and fiber!

- 1/4 cup raw coconut flour
- 3 egg whites
- 1/4 cup almond milk( or any preferred milk)
- 2 packets stevia
- 1 tsb cinnamon

Directions

In a medium bowl mix dry ingredients first, coconut flour, cinnamon and stevia. Then add wet ingredients; almond milk and egg whites. Stir until well combined, since we are not using oil you may have to mix longer. Spray a non-stick pan with cooking spray and spoon batter mixture into pan. Use the back of the spoon to flatten the pancake. Pancake is ready when both sides are golden brown ( for healthy alternative top with apple sauce or sugar free maple syrup)
