Fabulous zucchini base pizza

Hi everyone,
Last night I made a pizza using zucchini as the base. It's taken from the lovely Jane Kennedy's book 'OMG I can eat that? Indulgent food minus the boombah'. It's a really good book of no-carb recipes.
For the base:
x1 large zucchini
1 egg whisked
100g low fat grated cheese
Preheat oven to 190deg celcius. Grate zucchini into a large bowl then stir through whisked egg and cheese until zucchini is well coated. Spread mixture out onto a baking tray lined with baking paper and make into a pizza shape. Bake in the oven for about 15-20 mins or until the base is golden and firm (keep an eye on this though, the zucchini i used last night was obviously quite watery and needed longer).
Turn your oven up to 230 deg celcius. Add toppings of your choice (we used chicken breast, olives and low fat fetta) and put the pizza back into the oven until cheese is melted and bubbling.
Makes 1 pizza or 2 serves.

what a great idea i love pizza but hate my sluggish tummy the next day from too much dough

It really is amazing! The zucchini doesn't taste very 'zucchini-ish'... it's very neutral tasting (like a pizza base should be). I quite like the texture of it too.0
